			<content:encoded><![CDATA[<p>One of the most famous local cuisines of the Bahamas is Conch. Conch is a firm, white meat found in ocean mollusk.  Often called &#8216;Fresh, Sexy Conch&#8217; the meat is thought to be an aphrodisiac.  Every part of it is edible, but most people only enjoy the white meat. Anyone who&#8217;s seen &#8216;Lord of the Flies&#8217; knows that you can create a wind instrument by cutting a small hole in the conch&#8217;s spire, so make your self a Conch Salad and play some music to create your own Bahamian paradise.</p>
<p>Ingredients:<br />
1 1/2 pounds conch<br />
1/4 cup cucumber, diced<br />
1/4 cup celery, diced<br />
1/4 cup red onion, diced<br />
1/4 cup red bell pepper, diced<br />
1 small tomato, seeded and diced<br />
1 cup freshly squeezed lime juice<br />
1 tablespoon Matouk&#8217;s hot sauce<br />
1 1/2 teaspoons salt<br />
2 tablespoons fresh thyme leaves, chopped</p>
<p>Lightly pound conch. Dice into 1/2-inch pieces. Toss conch with remaining ingredients and let sit at least 1 hour in refrigerator. Serve over fresh mixed greens with a wedge of lime.</p>

			<content:encoded><![CDATA[<p>The coast of the Bahamas offers many scenic dives of tropical reefs and vast marine life. But if you dive down 50 feet off the southwest coast of Nassau, you will find a sunken ship. The Bahama Mama, a 110-foot &#8220;party boat&#8221; that wrecked in 1995, provides an interesting and historic dive. While viewing the remnants of the wreckage, you may also venture nearby to view the gorgeous coral reef and large green moray.</p>
<p>After a long-days dive, sink yourself into a comfy chair and sip on a more fortunate Bahama Mama in one of the many restaurants and bars on Bay Street.</p>

			<content:encoded><![CDATA[<p>The world&#8217;s third largest barrier reef is located just yards away from the Andros Island shore in the Bahamas. Andros Barrier Reef contains breathtaking views of marine life for amateur snorkelers on one side of the reef and expert divers on the other. The U.S. Navy has even conducted research on the deeper side of the reef. Dive down 104 miles and you&#8217;ll find the &#8220;Tongue of the Ocean.&#8221;</p>
<p>After a day engulfed in scenic views, deep waters and the ocean&#8217;s tastebuds, you&#8217;ll want to satisfy your own. Head farther south (on land, of course) to Hanks Place Restaurant and Bar in Coakley Town. Hank can offer you a place to stay for the night, but if you&#8217;re just looking for a good meal, make sure to order something with conch (a Bahamian staple) and the signature &#8220;Hanky Panky&#8221; drink.</p>

			<content:encoded><![CDATA[<p>The small Bimini Island of the Bahamas is located just east of Miami and contains a rich history of prominent figures, such as Hemingway, Zane Grey, Howard Hughes and Richard Nixon.</p>
<p>However, the sunken ship that lies in the shallow waters between South Bimini and Cat Cay was made famous by Henry Ford. The ship, Sapona, was commissioned by Ford in the roaring twenties and served as a speak-easy and private club. In 1929, the ship wrecked after it was blown by a hurricane. The ruins of the ship, and the rainbow-colored fish that surround it, serves as a popular snorkel and diving spot.</p>

<p>One good dive deserves another and you&#8217;ll find The End of the World located in Alice Town on the Bimini Island. In the 1960s, the late New York Congressman, Adam Clayton Powell, relaxed at this local favorite between preaching in Harlem and battling Congress (Hemmingway is also a former patron). The bar is decorated in graffiti and filled with sand floors and is a great spot to end your day.</p>
